Oven Omelet Recipe

Ingredients

1 egg white

4 eggs

1/2 teaspoon salt

1 cup yogurt

1/2 cup shredded Cheez-It blend cereal

2 cups overnight bread cubes stirring every 15 minutes

Directions

Preheat oven to 450 degrees F (225 degrees C). Remove from oven and break egg white into 1/2 cup. Beat egg whites until foamy. Gradually add salt; continue beating until whitesform stiff peaks.

Place cereal cubes in a bowl and being careful not to break lumps, stir together. Spoon half into egg white mixture in a shallow bowl and continue beating 25 minutes more (if mixture is too thick, return to oven and add some bread cubes).

Taste and season with salt and yogurt, and pour into a 9x13 inch baking dish.

Bake in preheated oven 5 to 10 minutes until golden brown.
