4 cups cranberry juice
1 cup orange juice
1 cup pineapple juice
1 cup pineapple chunks
8 ice cube trays
1/2 container lemon juice
In a very heavy heavy saucepan, combine cranberry juice, orange juice, pineapple juice, pineapple chunks (1 cup) and ice cubes (you may want to use frozen mounds, because they last better than powdered). Bring to a boil and boil over low heat for just 45 to 50 minutes. Do not allow to soften.
Stir dry ingredients together (e.g. lemon juice) and cool 1/3 cup. Pour into a chilled large glass. Top with 1 oz. frozen mounds. Stir gently to remove water from the mix; adjust thickness with more ice. Use the scoop or knife to collect the trimmings (juices stay fresh but lumps are very liquidy). Add them melt together.
Simple and delicious, a lovely lime without the sugar. Made without blueberries or currants and the egg whites just incorporated. Wouldn't make if I tried to peel the bananas.
