1 tablespoon vegetable oil
1 onion, thinly sliced
1 teaspoon garlic powder
1 bracket salt pork root
1 teaspoon minced fresh ginger root
1 pound boneless pig loin roast
3 tablespoons brown sugar
½ 1 ounce dry black pepper sauce
Heat oil in a large skillet over medium heat. Stirring constantly, brown the onions and garlic powder, reduce by 1/2, place pork in pan, cover, and cook over medium heat for about 10 minutes, or until meat is browned. Stirring on liberally, let it cook, stirring occasionally. Stirring constantly, cook the ginger and the sugar. Gradually pour the pork and ginger mixture into the skillet, just until incorporated and thickened.
Place the roast in the pan with a few slits in the middle to make a platform for it to work on. Brown the sugar mixture over medium heat, then add water and lure it into the pan. Keep it covered; it may stain. (If it stains add some vinegar or water.)
