1 tablespoon vegetable oil
1 cup chopped onion
1 cup frozen green peas
1 cup chopped celery
1 green leaf lettuce, rinsed and dried
2 cups shredded mozzarella cheese
Place the oil in a large casserole dish.
Place the onions, peas and celery in drippings and spoon over the oil.
Divide the lettuce amongst the sliced beef and green peas; spread rear side of corn wrappers on top and tie with twine. Grasp edges of soaked wrappers tightly together.
Combine the mozzarella cheese, tomato slices and lettuce into a 6 by 8 inch baking dish. Pour liquid mixture in pan and cover.
Bake in preheated oven for 1 hour, or until oven and top are golden brown. Chill in refrigerator. Discard foil and cheese wrappers.
