1 (9 inch) unbaked deep dish pie crust
1 (3.9 ounce) package instant vanilla pudding mix
2/3 cup white sugar
2 cups water
Preheat oven to 325 degrees F (165 degrees C.)
In a large bowl, combine instant pudding mix and 1 cup of white sugar. Beat until smooth. In a small bowl, combine hot water. Pour into baking dish; mix well.
Line bottom of pie pan with paper towels, and carefully pour pudding mixture into pan. Bake in preheated oven for 25 minutes, or until a knife inserted into the center of the pie comes out clean. remove from oven and let cool 10 minutes before serving.
