4 large potatoes, cubed
8 slices bacon, cut into small pieces
1 (5 ounce) can peeled and diced tomatoes
2 red bell peppers, thinly sliced
3 cloves garlic, chopped
1/2 cup chopped celery
1/4 cup vegetable oil
1/2 cup white wine
1/2 cup water
salt and pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine potatoes, bacon, diced tomatoes, and peppers.
In a small bowl, whisk together the garlic and celery; pour over potatoes, reserving potato mixture in a bowl. Pour remaining mixture over potatoes, reserving in a bowl. Pour the wine mixture over potatoes, reserving the water. Season with salt and pepper, if desired, to taste and saute for 8 to 15 minutes, or until potatoes are tender.
